  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts
  • 1 cup celery (diced)
  • 1 cup carrots (sliced)
  • 1 cup onion (chopped)
  • 1/2 tablespoon garlic (minced)
  • 2 cups Yukon gold potatoes (peeled & cubed)
  • 3 cups low-sodium chicken broth
  • 1/2 cup milk of choice

Instructions

  1. Prep all ingredients by chopping vegetables and cubing the chicken.
  2. In your Instant Pot or large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant.
  3. Add chicken pieces and cook until browned. Pour in chicken broth and add carrots, celery, potatoes, black pepper, salt, and herbs.
  4. If using an Instant Pot, seal the lid and cook on high pressure for 15 minutes; for a crockpot, cook on low for 6 hours or high for 3 hours; or simmer on the stovetop for about 30 minutes until chicken is cooked.
  5. Stir in milk before serving, adjusting texture as desired.
