  • 1 packet taco seasoning
  • 2 ¼ cups beef broth
  • 1 10 oz can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1 ½ cups long grain white rice (dry, uncooked)
  • 2 cups shredded cheese

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion, cooking until browned and onions are translucent. Drain excess grease.
  2. Stir in minced garlic and taco seasoning, cooking for about 30 seconds until fragrant.
  3. Add beef broth, Rotel tomatoes, and tomato paste to the skillet; bring to a boil before stirring in dry rice.
  4. Cover skillet with a lid and reduce heat to low; simmer for 15 minutes until rice is tender.
  5. Sprinkle shredded cheese on top and cook for an additional 5 minutes until melted and bubbly.
