  • 1 medium head cauliflower
  • 1 medium carrot
  • 1/4 cup chopped celery
  • 2-1/2 cups water
  • 2 teaspoons chicken bouillon or 1 vegetable bouillon cube
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups 2% milk
  • 1 cup shredded cheddar cheese

Instructions

  1. In a Dutch oven, combine cauliflower florets, shredded carrot, chopped celery, water, and bouillon. Bring to a boil, then reduce heat and simmer covered for 12–15 minutes until vegetables are tender.
  2. In a large saucepan, melt butter over medium heat. Stir in flour, salt, and pepper until smooth.
  3. Gradually whisk in milk and bring to a boil while stirring continuously until thickened (about two minutes).
  4. Reduce heat and stir in cheddar cheese until melted. Optionally add hot pepper sauce if desired.
  5. Combine the cheese sauce with the vegetable mixture until well mixed.
