  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • 2 cups jasmine rice

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. Heat vegetable oil in a large pot over medium-high heat and brown the chicken skin-side down for 5-7 minutes until golden.
  3. Flip the chicken, add soy sauce, brown sugar, garlic, and ginger; stir to combine.
  4. Pour in chicken broth; bring to a boil, then reduce heat and simmer for about 20 minutes until cooked through.
  5. While simmering, rinse jasmine rice under cold water and cook in a separate pot with water until fluffy.
  6. Serve sliced chicken over rice with plenty of broth on top.
