  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • Chopped green onions
  • Fresh cilantro

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. In a large pot, heat vegetable oil over medium-high heat and sear chicken skin-side down for 5–7 minutes until golden.
  3. Flip the chicken and add soy sauce, brown sugar, garlic, and ginger; stir well.
  4. Pour in chicken broth to cover the chicken; bring to a boil, then reduce heat and simmer for about 20 minutes until cooked through.
  5. Meanwhile, rinse rice under cold water; cook in a separate pot with water until fluffy (15–20 minutes).
  6. If desired, thicken the broth with cornstarch slurry before serving.
  7. Serve sliced chicken over rice with broth ladled on top and garnish with green onions and cilantro.
