  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 3/4 cups cake flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • Filling: 3/4 cup light brown sugar, 1 teaspoon cinnamon
  • Icing: 1 cup powdered sugar, 3 tablespoons melted butter, 2.5 tablespoons milk

Instructions

  1. Cream together butter, granulated sugar, and brown sugar using a stand mixer until light and fluffy. Add eggs and vanilla; mix well.
  2. In a separate bowl, combine dry ingredients. Gradually mix into creamed mixture until just combined. Chill dough for one hour.
  3. Preheat oven to 350°F (175°C). Prepare baking sheets with parchment paper.
  4. Prepare the filling by mixing all filling ingredients until smooth.
  5. Form cookie dough balls, placing filling inside and sealing well. Bake for 11–13 minutes until golden around edges.
  6. Cool on racks and prepare icing by whisking all icing ingredients together before drizzling over cookies.
