  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • Sparkling sugar (for topping)

Instructions

  1. In a mixing bowl, cream together the brown butter and both sugars until smooth. Add the eggs and vanilla extract; mix until fluffy.
  2. In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until combined.
  3. Roll about 3 tablespoons of dough into balls and optionally coat with sparkling sugar.
  4. Chill the dough in the fridge for at least 2 hours or overnight for best results.
  5. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  6. Arrange dough balls spaced apart on the sheet and bake for 9-11 minutes until edges are set but centers remain soft.
  7. Let cool briefly on the baking sheet before transferring to a cooling rack.
