  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 medium onion, sliced
  • 1 bell pepper (red or green), sliced
  • 8 ounces mushrooms (shiitake or button), sliced
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon honey
  • ½ teaspoon rice vinegar
  • 2 green onions, chopped

Instructions

  1. Mix sliced chicken with cornstarch, salt, and black pepper until evenly coated.
  2. Heat oil in a large skillet over medium-high heat; stir-fry the chicken until browned (4-5 minutes). Remove and set aside.
  3. In the same skillet, stir-fry onion and bell pepper for 2-3 minutes. Add mushrooms and garlic; cook until fragrant (another 2-3 minutes).
  4. Whisk together the sauce ingredients in a bowl. Add to the skillet along with the cooked chicken; toss until heated through (1-2 minutes).
  5. Garnish with chopped green onions before serving.
