  • 1/2 cup milk or cream
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables (bell peppers, tomatoes, onions)
  • Optional: 1/2 cup cooked crumbled bacon or sausage
  • Optional: 1/2 cup chopped turkey

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray.
  3. Chop any vegetables and pre-cook meats if using.
  4. In a mixing bowl, whisk together eggs, milk or cream, salt, and pepper until frothy.
  5. Add chopped veggies, meat, and cheese into each muffin tin cavity.
  6. Pour the egg mixture into each cavity until about 3/4 full.
  7. Stir gently with a fork to combine ingredients.
  8. Bake for 12-18 minutes or until set and slightly golden on top.
  9. Allow cooling before removing from the tin.
