  • 3 cloves garlic, minced

  • Pinch of cayenne (optional)
  • 2 tablespoons tomato paste
  • 6 cups vegetable broth (low sodium)
  • 1 can (14 ounces) diced fire-roasted tomatoes
  • 1 cup dried red lentils, rinsed
  • 1 small green cabbage, shredded
  • Juice and zest of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large saucepan over medium-high heat. Sauté the onion, carrots, and celery for about 5 minutes until tender.
  2. Add garlic, oregano, cumin, paprika, and cayenne; cook for another minute until fragrant.
  3. Stir in the tomato paste and cook for one more minute. Then add the vegetable broth, diced tomatoes, and rinsed lentils.
  4. Gradually mix in shredded cabbage until fully submerged.
  5. Bring to a boil then reduce heat to low. Cover and simmer for about 20 minutes until all ingredients are tender.
  6. Finish by stirring in lemon juice and zest; season with salt and pepper to taste.
