  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 3/4 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1 large egg
  • 1/4 cup unsulfured molasses
  • 1 teaspoon vanilla extract
  • 1/3 cup granulated sugar (for rolling)

Instructions

  1. Sift together flour, salt, baking soda, ginger, cinnamon, and cloves in a medium bowl; set aside.
  2. In a large bowl, cream softened butter and brown sugar with an electric mixer until light and fluffy (about 2-3 minutes).
  3. Add egg, molasses, and vanilla extract; mix until smooth.
  4. Gradually incorporate dry ingredients into the wet mixture on low speed until a soft dough forms.
  5. Cover dough with plastic wrap; refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized portions of dough, roll into balls, then coat in granulated sugar.
  8. Place on prepared baking sheet with space in between and bake for 8-10 minutes until slightly soft in the center.
  9. Allow to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
