  • 1/2 cup butter (softened)
  • 2/3 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk (room temperature)
  • 2 large apples (peeled and chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan with non-stick spray.
  2. In a mixing bowl, combine flour, baking powder, cinnamon, and brown sugar.
  3. In another bowl, cream together softened butter and granulated sugar until fluffy. Add eggs and vanilla; mix well.
  4. Gradually add dry ingredients into wet mixture while alternating with milk until just combined.
  5. Fold in the chopped apples gently until evenly distributed.
  6. Pour batter into the prepared pan; sprinkle topping of granulated sugar mixed with cinnamon on top.
